Radicchio & Baby Lettuces with Cara Cara Oranges

This salad could not be simpler and goes with almost all greens. I like the bitterness of the radicchio paired with either little gem or other baby red lettuces. The Cara Cara oranges — in season during the winter months — are just fantastic but you could substitute regular oranges or stone fruit in the summer.

Ingredients

Instructions

  1. Place the lettuces into a large mixing bowl.
  2. Sprinkle a tablespoon of coarse salt over the lettuces.
  3. Douse with Sherry vinegar, approximately 4-5 tablespoons.
  4. Dress liberally with olive oil, about 3-4 tablespoons. Mix well by hand.
  5. Taste and adjust seasoning as necessary.
  6. Place Cara Cara orange slices on each plate and place lettuces on top.
  7. Optional: grate shreds of ricotta salata over the top for extra richness.

In summer, substitute Cara Cara oranges with ripe peaches or nectarines for a seasonal variation that's equally delicious.
